Years of working together have resulted in a culinary method in which each dish responds to three fundamental principles: functionality, digestibility and enjoyment. At Salvia, everything is made at home, without processed products, packaged sauces, industrial broths or preparations that compromise the purity of the food. Stocks, ferments, dressings, bases and cooking are developed in the kitchen following protocols that preserve nutrients and avoid additives.
The majority of fruit and vegetables come from Althaya EstateZEM Wellness Clinic Altea's organic farm, which guarantees traceability, freshness and exceptional quality in each ingredient.
The menus Detox, Rejuvenation and Essential are designed to offer a daily balance of proteins, carbohydrates and healthy fats from an anti-inflammatory and Mediterranean perspective. This nutritional structure is expressed through contemporary techniques and a sober, precise and deeply respectful style with the product, the hallmark of chef Díaz Esterri.
