Spain, internationally renowned for its Iberian ham, olive oil and wine, is one of the countries with the most Michelin-starred restaurants in the world. Beyond the excellence of our gastronomy, we highlight restaurants committed to sustainability, respecting our environment and valuing local resources. In the 2021 selection of the Michelin Guide to Spain & Portugal, the Michelin Green Stars, which recognise restaurants committed to the environment, were awarded for the first time. With the aim of giving visibility to restaurants that pursue a sustainable philosophy, the Michelin Green Star rewards restaurants that respect the rhythm of nature, promote innovations in the field of sustainability and maintain a sustainable management of resources, avoiding waste. Its Chefs are dedicated to making a difference and taking a step towards a sustainable future. In Spain there are 27 Michelin Green Star awarded restaurants, of which four stand out with the rating of three Michelin Stars. Azurmendi

The Azurmendi restaurant offers an authentic experience of Biscayan cuisine, adapted to the nature of its local environment. It is located in Larrabetzu, just 20 minutes from Bilbao. The chef Eneko Atxa creates original and creative dishes based exclusively on

 products from the region, valuing what local nature has to offer and creating a sustainable gourmet experience. They have their own greenhouse, where they harvest spices and ingredients for their dishes. In addition, the architecture and decoration of the restaurant itself, creates an immersion in nature. The restaurant has facilities that generate renewable energy to cover part of its energy costs. Azurmendi was not only awarded three Michelin Stars and the Michelin Green Star, but was also named the most sustainable restaurant in the world in 2014 and 2018.

Cenador de Amós

Cenador de Amos restaurant offers modern gastronomy in a rustic-chic atmosphere in Villaverde de Pontones, Cantabria. Chef Jesús Sánchez and his wife Marián Martínez converted the 18th century Casa-Palacio Mazarrasa into a gourmet restaurant with local products, seeking authenticity and respecting the natural surroundings and the environment. 

They employ the concept of the circular economy, growing some of the produce in their own vegetable garden and generating energy with their solar community. El Cenador de Amós pursues its strong commitment to sustainability and is certified as a Zero Net Emissions restaurant, operating solely on renewable energy.

Aponiente

Aponiente stands out for the innovative cuisine of chef Ángel León, discovering new techniques and creative combinations with the possibilities that the sea gives us. Among them, the preparation of dishes with salt water, discarded fish or seaweed. Following its strong commitment to the environment, the restaurant operates with renewable energies and recycling practices, taking care of its sustainable impact. Aponiente is located in Puerto de Santa Marta in Andalusia and has been awarded three Michelin Stars and the Michelin Green Star.

El Celler de Can Roca

El Celler de Can Roca, the restaurant of the famous Roca brothers, is one of the most emblematic restaurants in our country. With the specialisation of each one, they create a gourmet experience that encompasses the salty, sweet and liquid world. Located in his hometown Girona, its gastronomy combines tradition, creativity and innovation that surprises all the senses, combined with an authentic and hospitable service. The restaurant has been awarded three Michelin Stars and the Michelin Green Star for its commitment to the environment. The composition of the dishes is based on local products and follows recycling practices, promoting awareness of the environmental impact.
