In the 2021 selection of the Michelin Guide to Spain & Portugal, the Michelin Green Stars, which recognise restaurants committed to the environment, were awarded for the first time. With the aim of giving visibility to restaurants that pursue a sustainable philosophy, the Michelin Green Star rewards restaurants that respect the rhythm of nature, promote innovations in the field of sustainability and maintain a sustainable management of resources, avoiding waste. Its Chefs are dedicated to making a difference and taking a step towards a sustainable future.

In Spain there are 27 Michelin Green Star awarded restaurants, of which four stand out with the qualification of three Michelin Stars.
